Mandazi is a popular East African snack, and making mini mandazi can be a delightful treat, especially during this festive season. Here is a simple recipe for soft and delicious mini mandazi:
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup sugar (adjust to taste)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cardamom (optional, for flavor)
- 1/2 cup coconut milk (or regular milk)
- 1 large egg
- 2 tablespoons melted butter or vegetable oil
- Oil for deep frying
Instructions:
- Mix dry ingredients:
- In a large mixing bowl, combine the flour, sugar, baking powder, salt, and ground cardamom (if using). Mix well to ensure even distribution of ingredients.
- Combine wet ingredients:
In a separate bowl, beat the egg and then add the coconut milk and melted butter or vegetable oil. Mix until well combined. Pour the wet ingredients into the dry ingredients and mix to form a soft dough. If the dough is too sticky, you can add a bit more flour until you achieve a soft, pliable consistency.
Cover the dough with a clean kitchen towel and let it rest for about 30 minutes. This allows the dough to relax and makes it easier to handle.
- Shape the Mini Mandazi:
Roll out the dough on a floured surface to about 1/4 inch thickness. Use a cookie cutter or a knife to cut out small rounds or desired shapes.
In a deep pan or fryer, heat enough oil for deep frying. The oil should be hot but not smoking.
Carefully place a few pieces of the shaped dough into the hot oil. Fry until the mini mandazi turn golden brown on both sides. This usually takes about 2-3 minutes per side.
Remove the mini mandazi from the oil using a slotted spoon and place them on paper towels to drain excess oil. Allow them to cool slightly before serving.
